Ni├žoise dressing

1 tbsp red wine vinegar
a little Dijon mustard if you wish
50ml extra virgin olive oil
1 small clove of garlic, peeled and crushed to paste

Whisk the vinegar and mustard together with the garlic and some salt and pepper.
Continue to whisk whilst drizzling in the oil.
