250 gm mascarpone cheese
250 gm cream
30 gm icing sugar
10 ml vanilla extract

Notes

Have the mascarpone well chilled. Warm mascarpone will split very easily.

Whip the cream and powdered sugar with an electric whisk until soft peaks form.
In a separate bowl, gently mix together the mascarpone and vanilla.

Fold the whipped cream through the mascarpone until well combined.
Use immediately or refrigerate until needed.
